Peanut Satay Noodles With Chicken

Last night I used the leftover peanut satay sauce and a store-bought rotisserie chicken to make these noodles.  I added a thinly sliced red bell pepper, cilantro and lime juice.  The peanut satay sauce does take a few minutes and a few ingredients to make, but because it makes so much that you have leftovers like this, I think it’s worth it.

My kid’s minds were blown last night.  Noodles AND peanut butter (sort of) for dinner.  You know the best part about your kids liking AND eating their dinner?  The ten minutes of silence it buys you.  The satisfaction of providing a healthy, delicious meal for your beautiful children, of course.
